What exactly is an Oriental tagine and how does it work?

The Arabic tagine is actually a stew pot, made of earthenware. It consists of a round dish topped by a cone-shaped lid. This shape ensures that the ingredients are steamed through and the flavours mix well. The condensation precipitates against the inside of the lid and drips back into the bowl. This keeps everything tender and also creates a delicious gravy or sauce. So you can eat beef, chicken or fish tagine, for example.

Using the cooking tagine

Before you can use earthenware tagines for the first time, they should be placed under water for 24 hours. This will prevent them from cracking the first time. After the first use, this is no longer necessary. You can work in the oven or on the gas but when using on the gas, you should place a hot plate between the fire and the dish.

Dishes

A classic dish is lamb with prunes and almonds. Anyway, the combination with sweet ingredients is a favourite cooking method. Always provide plenty of herbs and spices as you want to achieve a powerful flavour and garnish with fresh coriander. You will find plenty of recipes on the internet (including in our own blog) that you can draw from and surprise your friends with next time.

For decoration

Some of these Oriental casseroles are not meant for cooking. It is purely for decoration or it is a serving tagine. A serving Moroccan tagine looks beautiful and authentic, a picture in your kitchen or room, but you can't cook with it. Something to watch out for.
