Step 1. Mix all the spices from the list in a plate along with a tablespoon of oil and water, and add all the vegetables from the ingredient list. Stir this mixture until the spices are well distributed over the vegetables.
Step 2. Place the tajine on low heat. Add oil and finely chopped onions to the tajine. Let the oil and onions simmer for about 10 minutes.
Step 3. After simmering, add the vegetables. Place the quickest-cooking vegetables on top. To start, add potatoes, turnip, carrots, zucchinis, tomatoes, and fresh peas to the tajine.
Step 4. Pour the remaining spices mixed with water into the tajine with the vegetables. Make sure there's always enough sauce in the tajine.
Step 5. Cover the tajine with the lid and let it simmer for an hour and a half to two hours. Keep an eye on the sauce in the tajine; if it's running low, add boiled water as needed.
Step 6. Check the vegetables with a fork to see if they're cooked. You're almost done.
Step 7. Once the vegetables are cooked, serve the vegetarian tajine, for example, on a Maroccan plate to create an Eastern atmosphere.
